When immune cells come in contact with oxygen, they deteriorate and become free radicals. Free radicals cause damage to the body. This is why vitamin C and E must be in your diet. Vitamins C and E are sources of antioxidants. And antioxidants are found in plenty in plant-based or vegetarian diet.

Not only this, vegan people eat fruits and vegetables more than non-vegetarians. This benefits their immune system. Along with this, vegan diet contains plant sterols (phyto sterols) which increase immunity.
